Please, please, please don't ever think that you're underqualified—holistic admissions makes a huge difference. I feel a bit inadequate even posting my application to this subreddit considering the EC's that many people here have. Having only won competitions that were statewide (and the state was Alabama!), I thought my application would go straight to the trash bin, but I ended up with phenomenal results. The essays really are crucial, so definitely start early, as is often recommended here. The QuestBridge CPS program helped so much just because it gave me a six month head-start on my essays. It's been years since anyone from my school has gone to a top school, so I would have been clueless w/o the help of people from this site. It was great having a community to turn to for advice. Lastly, in hindsight, I definitely should have applied to more schools, but thankfully, that didn't come back to bite me.
